Great to see some nice Filipino food on here, when my wife and I went to to her place in Pampanga her mum made an awesome tocino, if you have a recipe for the marinade any chance you could share it please.

Josie, Thank you for taking the time to put your recipes on. I cooked the Adobo for my family just last week and they loved it. I was surprised it was so simple but also I love to cook. Looking forward to seeing more cooking ideas from you guys. I am just getting back into camping after many, many years now that its just me and my wife at home. We camped when the kids were small but as they grew we got away from it. I have learned many things from you guys.

Hello Josie and MIke! Would you happen to know a recipe for making Lumpia? When I was in the service we ordered it with a sweet and sour sauce. I loved it. It may not be an easy dish to make but I thought I’d give it a try.

It’s been a while since I made some myself but here is a simple & easy recipe how to make it.
You will need:
1 lb of ground pork (half lean or not)
very finely chopped (1 small carrot, 1 small onion, 2 cloves of garclic, some dried raisins, some parsley) – if you have a food processor just throw all the ingredients
1 tbsp of oyster sauce
1 tsp of sesame oil
1 beaten egg
salt & pepper to taste
a pinch of sugar
lumpia wrapper (ask any asian & they will tell you where to get it. 🙂
Just mix all the ingredients together and start rolling. You may use egg white to close the ends of your wrapper.
Heat your oil. Make sure it’s hot before frying your lumpia or else it will soak a lot of oil.
Cook & turn until golden brown.
Sauce: I don’t make the sweet & sour, we just buy a jar of plum sauce but here is something new if you would like to try Mike’s favorite sauce.
1 tbsp vinegar
1 tbsp water
1 tbsp soya sauce
1 drop of sesame oil
1 tsp of sambalek chili or tobasco
1 clove of grated garlic
some grated ginger
Of course you may serve it with rice 🙂

Josie and Mike, I really enjoy your videos. I would be interested in knowing the proportions of balsamic viginer to olive oil and maple syrup you use for your salad dressing as seen in one of your videos. Sounds good. Thank you for all you do for the outdoors fan. Otter
Hi Gene, just for Mike & myself, I use 2 tbsp of extra virgin olive oil, 1 tbsp of balsamic vinegar, 1/2 tsp maple syrup but if you want to spice it up a bit… add 1 clove of pressed garlic then season your salad with salt & pepper, totally up to you. You may adjust the amount depending on your batch of salad. Hope this helps & enjoy! Josie
